George’s other love is the Polish community. Born
in the St. Hyacinth area, he is very proud of his Polish
heritage. Anyone who knows George is aware that he is
always ready to do whatever it takes to promote Polonia in the
community. Several years ago he negotiated with the
Cleveland Indians to have a Polish Night at the stadium.
Since then, this had been an annual event through 2010 which
commenced with a pre-game infield parade and a ceremonial
first pitch. The record of ticket sales for this event was in
2007 when 1,000 tickets were sold by the Polish
organizations. George had the honor of throwing out the first
pitch that year. When the International Children’s Games and
Cultural Festival were held in Cleveland, besides chauffeuring
the Polish dignitaries around Cleveland, George supplied
Cleveland Indians baseball caps to all of the athletes from
Poland as a remembrance of the event. George also organized
an annual “Polish Open” golf tournament which had become
quite popular over the years. When asked what he considers a
major accomplishment, George is quick to respond that he
considers his efforts to have the war memorial bearing the
names of two of his uncles, as well as other veterans from the
Polish neighborhood, moved from the closed St. Hyacinth
Church grounds to Calvary Cemetery to be among those
accomplishments most dear to his heart. In 2009, George
received the Polish Heritage Award from the Polonia
Foundation of which he is a Knight of Pulaski. When the
President of Poland, Bronislaw Komorowski, visited
Cleveland in December of 2010, George was honored to be
among those welcoming him to the Polish-American Cultural
Center and proud to shake his hand and take a small part in
this historical visit. In 2011, George was the Honoree of the
Ohio Chapter of The Kosciuszko Foundation at their annual
awards banquet. George served as business advisor to the
November, 2011 production of Zatańczmy, a celebration of
Polish Folk Dance performed at the Breen Center for
Performing Arts. George has been a frequent guest on the
Polish Radio Program on 90.3 FM hosted by Eugenia
Stolarczyk. He is thrilled to be the voice behind the opening
intro to Eugenia each Sunday. Currently George is proud to
serve as Vice President of the Polish-American Cultural
Center, on the board of trustees of the Polonia Foundation, on
the finance committee of St. John Cantius Church, and on the
board of trustees of the Cleveland Society of Poles of which
he is a past president. He is a member of the local chapter of
the Kosciuszko Foundation and the Union of Poles in
America-PNA of which he is Vice President of Group 33.
George resides in Granger Township in Medina County
with his wife, Karen.
His four children and eight
grandchildren all live in the area. In his spare time, he enjoys
traveling, golfing, experimenting in the kitchen (he really is a
good cook), and spending time with his family and friends.

A Visit with Arek and Beata Trybucki
at Kraków Deli
Visits to Polish stores are an inescapable part of
our life in Polonia. We can’t imagine our kitchens without
the tastes that we’re convinced we cannot replace. We all
buy some things that come straight from Poland, whether
regularly or just every so often. What can
compare with Polish kielbasa on the
grill? What can replace our barszcz

At the holidays this year I was treated royally in a
Polish store, and, in addition, I was also given some
excellent Delicje cookies. Standing in line at the cash
register I surreptitiously observed Arek and how he spoke
with people, how he helped them choose different products,
and I noticed his patience and sense of humor. This made
me think that there was a place in our modest Polonia press
for the Polish store and especially for its owner, who
intrigued me with his American attitude: „how can I help
you?” Kraków Deli offers a wide range of

of my own recent positive experience there,
I decided that I should pay Arek a

Arek’s positive attitude to his customers, his
demeanor, his smile, and his professionalism were a
pleasant surprise. He advised me personally, pointed out
new products, patiently answered my absurd, certainly
irritating questions, like: “Is this sauerkraut really fresh?”,
or: „which herring do you think I’ll like?” My husband’s
silent smile explained, “My wife is just like this…” and
tried to make up for my tedious questions, but Arek took
the risk of guessing which herring I would like so I would
be satisfied and everything would be just right.
The beginning was not easy. His first experience in
retail was in 2005, when he opened Village Bakery in
Independence, without any experience of owning a business
before; he and his wife learned on the job. “People don’t see
what goes on behind the scenes”, says Arek, „work in a
bakery is very hard.” He worked fifteen-hour days six to
seven days a week, because someone had to bake all the
wonderful Polish breads, the crusty rolls, cookies, and the

would stand in line every morning. His bakery quickly
became well known and popular in the neighborhood. He
was making money, but it was taking everything he had, not
leaving him any time for a break or for his family. A
business that prospers always has a price. The family pays
this price. Arek worked alone and hired American workers
seasonally. His success in the bakery enabled him to take his
next step,

because he believes that in times of strong competition
one can also be successful. In 2008 he took the risk of
getting out of the bakery business and opening Kraków
Deli. Here he is also the owner and a worker. He goes to
Chicago to pick up products to sell, looks after
everything, unloads and arranges the products, and on the
weekends he bakes. All the tempting treats, the Polish
sweets which we buy and admire, are the work of his own
hands.
Arek arrived in the United States in 1995. Like
many of us, he came “for a better life”. He spent two
years in New York, where he met his wife Beata. They
soon moved to Cleveland. By profession he is a pastry
chef. In his early days in the States he had a number of
jobs, some more interesting than others. He soon realized
that he would only be able to assure a stable livelihood
for his family and a hopeful future if he worked in the
field he knows best. His experience making superior
Polish baked goods was quickly appreciated. He worked
for five years in Pincus Bakery, a well-known Jewish
bakery near Cedar and Green in Beachwood. The next
three years he dedicated to another Beachwood favorite,
Davis Bakery. This work helped Arek realize his dream
of owning his own business. Already at the age of 27 he
decided that he would open his own bakery.
THE CUSTOMER IS KING
From the beginning his business operated on the
principle that the customer came first. “I want customers
to be satisfied and to find here everything that they want
to buy,” says Arek. If it turns out that the store does not
stock a product a customer wants, he will take another
trip to Chicago and find it, so the customer won’t be
disappointed. He realizes that in business you not only
take, you also give.
BUSINESS IS A GAME
Today Arek looks at the future a little more
peacefully, though the success of the store does not
guarantee that his business will last forever. He
constantly keeps the needs of the customer in mind, but
the customer decides where to shop. Arek adds that we
should appreciate the possibility of choice, that we live in
a free country, with many options. When it comes to his
own business, he says it is a type of game based on risk.
What is important in this line of work is knowledge,
experience, the trust of purveyors and customers, and the
trust of employees. A good business considers each of
these factors. A company must be a family. It’s natural to
hire
Arek Trybucki and Agata Wojno
people whom you trust. Arek stresses, „Without my wife’s
help, I would not be able to manage.” The success of the
store should also be attributed to his family and to his
employees. His sixteen-year-old daughter Izabel already
helps out at the store, and his eleven-year-old son Nicholas
may in the future also relieve some of his father’s burden.
Arek hires people on whose professionalism he can rely; he
praises his sales clerk Marcie, whose work he especially
appreciates.
Is there life outside the store? Arek has been
fascinated by soccer for years. Besides the products at the
entrance saying “buy me”, one can see a poster of Polish
soccer players on the wall when entering the store. The
pictures include the autographs of the players, and Arek, too,
because the players are friends of his, with whom he’s in
regular contact. The goalkeeper Radek Majdan is a friend of
Arek’s; they played soccer together as teenagers in Pogoń
Szczecin. Arek was a talented young player, but a serious
medical problem with his knees hindered his soccer career.
Polish soccer’s loss is Cleveland’s gain! Now Polonia can
shop in his Kraków Deli, a successful, prospering business.
Arek Trybucki celebrated his 40th birthday on
February 12th, 2012. The Forum’s Editorial Board and his
many customers extend their best wishes. May he find the
right balance between his work and family and time for
friends and relaxation. May he meet many interesting people
along the way and enjoy the companionship of his loved
ones and the health and energy needed for further success.

Kiedy przyjechałem do Stanów, a było to ponad 30 lat
temu, pracowałem w fabryce jako operator maszyn. Najpierw
jednak musiałem się sprawdzić jako pomocnik operatora.
Przydzielono mnie do starszego pana, zupełnie sympatycznego i
odnoszącego się do mnie z wyrozumiałością. Mówił po polsku
z lekkim akcentem i byłem przekonany, że urodził się i
wychował w Stanach w rodzinie polskiej. Na moje pytanie skąd
pochodzi, odpowiedział, że urodził się i wychował w Cleveland.
Jest z pochodzenia Słowakiem, a polskiego nauczył się od
kolegów, Polaków w Slavic Village. Zdziwiłem się nieco, ale
nie miałem powodów mu nie wierzyć. Nieco później
dowiedziałem się od kolegów z pracy, że mój majster urodził
się w Cleveland w polskiej rodzinie, tylko wstydzi się przyznać
do swojej polskości. Byłem trochę zaszokowany tym i nie
bardzo wiedziałem, o co w tym wszystkich chodzi. Później
spotkałem jeszcze kilka osób, które zapierały się swoich
polskich korzeni.
Gdy po jakimś czasie poznałem lepiej angielski,

koncentracyjne" i tym podobne rzeczy. Zastanawiałem się, co
można z tym zrobić i jak na to reagować. Mój telefon do stacji
telewizyjnej po kolejnych "polskich obozach koncentracyjnych"
został po prostu zignorowany. Zdawałem sobie sprawę, że
wykrzykiwanie na polonijnych zebraniach ma niewielki sens.

Jako pierwszy przyjechał do Cleveland profesor doktor
habilitowany Piotr Wilczek, historyk literatury, komparatysta,
tłumacz. Poprzednio pracował w Uniwersytecie Śląskim. W
latach 1998-2001 był profesorem wizytującym na
uniwersytetach w Stanach Zjednoczonych (Rice University,
University of Chicago, University of Illinois w Chicago).
Wygłaszał również wykłady gościnne na Harvard University,
University of Texas w Austin i Boston College.
W Uniwersytecie Warszawskim prof. Wilczek pełni
funkcję zastępcy dyrektora Kolegium Międzywydziałowych
Indywidualnych Studiów Humanistycznych UW, kierownika
Kolegium Artes Liberales UW oraz kierownika Studiów
Doktoranckich w AL UW. Kieruje też założoną przez siebie
Komisją do Badań nad Reformacją w Polsce i Europie
Środkowo-Wschodniej w IBI AL UW. Autor książek i
artykułów z zakresu literatury epok dawnych, przekładu
artystycznego współczesnej literatury polskiej. Przełożył też
kilka książek z języka angielskiego.
Miałem przyjemność być na dwóch wykładach prof.
Wilczka: w Polsko–Amerykańskim Centrum Kultury i na
zebraniu Cleveland Society of Poles. Pierwszy o literaturze
polskiej w kontekście literatury światowej, drugi o roli religii w
społeczeństwie polskim. Oba wygłoszone nienaganną
angielszczyzną, niekonwencjonalnie i ciekawie.
Zdaję sobie sprawę również z tego, że w ostatnich
dwudziestu latach wiele się zmieniło. Powody są dla mnie
raczej oczywiste: Solidarność w Polsce, polski papież, Wałęsa –
najbardziej rozpoznawalny Polak w tym kraju, inna emigracja w
latach osiemdziesiątych, coraz większa świadomość wartości
wykształcenia wśród Polonii, no i oczywiście, coraz więcej
Polaków i Amerykanów polskiego pochodzenia na
odpowiedzialnych stanowiskach. Dalej jednak wyskakują takie
"kwiatki', jak polskie obozy koncentracyjne, czy ostatnio,
uwaga prezydenta Ohio State University pana Gordon'a Gee,
popisującego się dowcipem typu "were shooting at each
other…. like the Polish Army". Zastanawiam się tylko, że jeśli
ktoś wyniesiony do godności prezydenta prestiżowego
uniwersytetu wykazuję taką ignorancję, to co mówić o reszcie.
Bo jest to po prostu ignorancja. Brak podstawowej wiedzy o
polskiej historii i kulturze, a na to, o ile wiem, jest tylko jedna
rada – edukacja. Dobrze się więc dzieje, że dr Alex Storozynski,
prezydent Fundacji Kościuszkowskiej wszczął kampanię
przeciwko takim wygłupom.
Niezależnie od programu zapraszania polskich
naukowców na wykłady w Cleveland State University, również
na innym clevelandzkim uniwersytecie narodziła się inicjatywa,
o której chciałbym tu wspomnieć. Jest to "travel–abroad"
program w Mandel School of Applied Social Sciences of Case
Western Reserve University, do którego mogą się przyłączyć
również studenci innych uczelni. W tym roku dzięki inicjatywie
dr Kathleen Farkas i dr Ryszarda Romaniuka została
zorganizowana grupa kilkunastu studentów, którzy wyjadą do
Polski. Warto zaznaczyć, że większość z tych młodych ludzi nie
ma żadnych korzeni polskich. Już w ramach przygotowań do
wyjazdu studenci wysłuchali szeregu wykładów na temat
historii i kultury polskiej oraz problemów socjalnych w Polsce.
Wierzę w to, że po powrocie ci młodzi ludzie staną się w
mniejszym czy większym stopniu ambasadorami polskości.
Chciałbym jednak skupić się na innej, bardzo pozytywnej
sprawie. Otóż z inicjatywy dziekana College od Liberal Arts
and Social Sciences Cleveland State University, Gregory M.
Sadlek'a, powstał komitet, który poprzez dr Strorozynskiego
nawiązał kontakt z Uniwersytetem Warszawskim. Jest to
program, którego celem jest sprowadzanie na cykl wykładów
humanistów z Polski. W założeniu komitetu nie chodzi tu

programami dużym ośrodkom polonijnym, jak Chicago czy
Nowy Jork. Sądzę jednak, że dla mniejszych ośrodków może to
być szansa na kształtowanie wizji Polski takiej, jaką jest –
współczesnym, rozwiniętym krajem w Europie Środkowej. A
spojrzenie na nas, Polonusów w tym kraju, będzie lustrzanym
odbiciem tego obrazu Polski.

Learning about Poles and Poland
When I came to the United States, over thirty years ago, I
worked in a factory as a machine operator. First, though, I had to
work as an assistant to an operator. I was assigned to a very nice
and understanding older man. He spoke Polish with a slight
accent, and I was convinced that he was born and raised in a
Polish family in the States. When I asked where he was from, he
said he was born and raised in Cleveland. He was Slovak, but he
had learned Polish from friends in
Slavic Village. I was surprised, but I
had no reason not to believe him.
Somewhat later I found out from
friends at work that he was born in
Cleveland to a Polish family but that he
was embarrassed to admit that he was
Polish. I was a little shocked by this,
and I didn’t understand. Later I met
many others who also denied their
Polish roots.

Dean Sadlek hopes to establish a series of visits from Polish
faculty in the humanities. The visiting faculty would not only
teach semester-long Polish courses for students but also offer
lectures and programs for local organizations interested in
teaching others about Polish culture.

W ostatnim numerze Forum ukazał się Pański
tekst wychwalający zalety polskiej kuchni. Niewątpliwie
polska kuchnia jest wyśmienita, to znaczy bardzo
smaczna, dla nas Polaków nie dorówna jej żadna włoska,
francuska czy jakakolwiek inna. Nie rozstrzygnę sporu
pomiędzy Panem a pańskim włoskim przyjacielem,
ponieważ Wasze opinie to kwestia w tym przypadku
Waszych gustów i tradycji a nie rzetelnych faktów. Mam
za to swoje zdanie na temat polskiej kuchni i niestety
uważam, że to nasze powszechne przekonanie, że polska
kuchnia jest najlepsza, jest nieco przereklamowane, że to
nasze emocje, tęsknoty i tradycja. I tylko tyle.
Oczywiście, że sama uwielbiam gołąbki, barszcz, bigos,
nawet pierogi, nie wspomnę już o pączkach..., pysznych,
pulchnych, słodkich, „ugotowanych” w tłuszczu pączkach
– jeden ma ok. 400 kalorii...
Polska goloneczka...

Amerykanie podróżujący ze mną byli zachwyceni
polskimi potrawami – w tym kontekście to nawet
rozumiem Pana opinię, ale... przyjrzyjmy się
zagadnieniu bliżej. Polskie pierogi, naleśniki z
jagodami, wieprzowinka po zbójecku, smalczyk z
wiejskim chlebem z pieca, bigos myśliwski z kiełbasą,
GOLONKA z piwem, kopytka, placki ziemniaczane
ze śmietaną, kotlet schabowy itp.itd. I co? Ślinka

DOBRE BO POLSKIE, pyszne nawet. Wróciłam do
USA z dumą zdobytych kilku funtów. A moi
przyjaciele Amerykanie, zajadający się polskimi
potrawami, pod koniec pobytu już nie mogli patrzeć
na pierogi i kotlet schabowy i rozglądali się za
czymś lekkim, prosząc o jakieś warzywka na parze i
jogurt naturalny...
GDZIE SENS? W tej polskiej kuchni?
Wielu z nas tłumaczy się, że nadmiar kilogramów to
wada genetyczna, zażywane leki, „taki już mój
urok” i
nic poza tym. I tylko przemysł
farmaceutyczny zarabia na takich zwolennikach
„świetnej” polskiej kuchni.
Drogi Panie, muszę Pana rozczarować, ale
po części zgadzam się z pańskim włoskim kolegą –
bo nie ma nic na świecie lepszego niż tiramisu.
Kiedy ktoś postawi przede mną najlepsze wypieki
polskiej kuchni i najlepsze włoskie tiramisu,
wybiorę tiramisu... i pączki pójdą w odstawkę.
W sobotni wieczór 3 marca 2012 roku gościliśmy
Jana Pietrzaka, który w Polsko-Amerykańskim
Centrum Kultury wystąpił w programie „Potęga
śmiechu”. Na sali zgromadziło się około 140 widzów, a
występ udowodnił raz jeszcze, że artysta to król
polskiego kabaretu o 50-letnim doświadczeniu
estradowym. Cięte i ostre monologi, wspomnienia o
czasach PRL rozbawiały publiczność do łez. Pietrzak to
niewątpliwie artysta wszechstronny – autor tekstów i
piosenek oraz ich wykonawca grający na gitarze, który
doskonale wyczuwa publiczność i potrafi bawić ją
przez kilka godzin. Mocny, lekko zachrypnięty głos
twórcy „Egidy” brzmi nadal czysto, raz melancholijnie,
raz dramatycznie. Artysta prowadził z publicznością
rozmowę estradową mocno osadzoną w polskiej
historii. Była w niej tradycyjna nuta patriotyzmu, jak
też zadumy, a nawet dość ostrej krytyki obecnych
władz. Artysta ma jednak prawo do własnej wizji
swojej sztuki, którą nam widzom przychodzi albo
akceptować albo odrzucać. Jedno jest pewne – program
Jana Pietrzaka mógł się jednym podobać, innym mniej
ze względu na treści, ale z pewnością był profesjonalny
pod względem artystycznym. Mieliśmy okazję
otrzymać pokaźną dawkę leczniczego humoru, za co
dziękujemy wykonawcy i wszystkim organizatorom.

tęsknota, to idealizowanie tych smaków na
emigracji, to dom rodzinny i kotlety smażone na
tłuszczu, ale podane z uśmiechem i sercem matki.
To smak polskich świąt i niech ten smak na święta
nam towarzyszy, nie może go przecież wtedy
zabraknąć. Ale – litości – tylko na święta! Bo
częściej to już przestanie być kuszący i dobry, a
stanie się szkodliwy.
