Mgr Urszula Brodzik Impact of age and sex on the growth, slaughter yield and economic effectiveness of rearing ducks The purpose of the studies was to determine the impact of age and sex on the growth, slaughter yield and economic effectiveness of rearing Pekin ducks Star 53 H.Y. 300 ducks were subject to the study. The rearing took 8 weeks. The weight of the birds was checked and zoometric measurements were made every week. Apart from that, 3 ducks were chosen for slaughter from each of the subgroups. All in all, 168 birds were slaughtered in the study. Regardless of the sex, young birds, i.e. in the first three weeks of life, were characterised by the highest rate of growth. The rate of growth clearly dropped between the 7th and 8th week of life. During rearing that lasted 8 weeks the body of birds grew, regardless of their group and sex: their trunk became nearly 3 times longer, perimeter of the thorax - 2.5-5 times larger, and the length of jump - 2.5 times longer. As the ducks aged, it was observed the long-leggedness ratio (ratio of jump length to body length) and compactness ratio (ratio of thorax perimeter to trunk length) dropped. On the other hand, at the same time the massiveness ratio (ratio of body weight (in kg) to trunk length) went up. Regardless of the group and sex, the most intensive increase in the breast muscle content took place in the 5th, 6th and 7th week of life, reaching 17.7% - 18.2 % in the 7th week of life. A reverse tendency was observed in the case of leg muscle content. In consecutive weeks of breading a gradual but constant drop in the leg muscle content in the eviscerated carcass was observed, from 15.1% - 16.7 % in the first week to 11.5% - 13.3 % in the eighth week. In the case of all birds subject to the study, the content of skin with subcutaneous fat was relatively high and was on the decrease from the 1st to the 7th week of life. In the case of all birds, prolonging duck rearing to 8 weeks resulted in a rise in that tissue content in the carcass on average by 1.5 - 5.5%. Economic factors (cost-effectiveness, profitability, and relative costs) show that rearing broiler ducks is economically justified. Additionally, the value of EBI (European Broiler Index) suggests that these birds should be reared for 7 weeks. Łącznie badaniami objęto 300 kaczek. Odchów trwał 8 tygodni. W każdym tygodniu kontrolowano masę ciała ptaków i wykonywano pomiary zoometryczne, a ponadto z każdej podgrupy wybierano po 3 sztuki do uboju. Łącznie ubito 168 ptaków. Niezależnie od płci, najintensywniejszym tempem wzrostu odznaczały się ptaki młode, tj. w pierwszych trzech tygodniach życia, natomiast wyraźnie zmniejszając tempo wzrostu między 7 i 8 tygodniem życia ptaków. W okresie odchowu, trwającego 8 tygodni ptaki niezależnie od grupy i płci zwiększyły swoją długość tułowia prawie 3-krotnie, obwód klatki piersiowej 2,5 – 3-krotnie, a długość skoku 2,5-krotnie. Wraz z wiekiem zaobserwowano zmniejszanie się wartości indeksu wysokonożności i zwięzłości, natomiast zwiększenie indeksu masywności. Najintensywniejszy wzrost udziału mięśni piersiowych następował u kaczek, niezależnie od grupy i płci w 5, 6 i 7 tygodniu życia, dochodząc w 7 tygodniu do wartości 17,7 – 18,2 %. W mięśniach nóg zaobserwowano odwrotną tendencję niż w mięśniach piersiowych ptaków. W kolejnych tygodniach odchowu stwierdzono stopniowe i stałe zmniejszanie się udziału mięśni nóg w masie tuszki patroszonej z 15,1 – 16,7 % w pierwszym tygodniu do 11,5 – 13,3 % w ósmym tygodniu. U wszystkich badanych ptaków udział skóry z tłuszczem był stosunkowo wysoki i stopniowo zmniejszał się od 1 do 7 tygodnia życia ptaków. Wydłużenie odchowu kaczek do 8 tygodni spowodowało u wszystkich ptaków wzrost udziału tego składnika tkankowego w masie tuszki średnio o 1,5 – 5,5. Wskaźniki ekonomiczne (opłacalności, rentowności i względnej wysokości kosztów) wskazują, że odchów kaczek brojlerów ma uzasadnienie ekonomiczne, a wartość wskaźnika EWW wskazuje dodatkowo, że odchów tych ptaków powinien trwać 7 tygodni. 2
